There are a lot of energy or snack bars on the market, and some of them are pretty good. But they’re expensive, mass produced and it’s pretty quick & easy to make your own instead. This is a simple 10 minute recipe for a well balanced energy bar. You just need a high speed blender or a food processor and two ingredients – couldn’t be simpler.
This is my favourite combo, but you can use different nuts. I’ve tried walnuts and I don’t like the aftertaste, although you could alter the quantities. Pecans are lovely in here, but expensive! Almonds are great too. Dates are nice and sticky and hold the whole thing together, they add sweetness and provide plenty of energy as they are mostly carbs.
This recipe makes 6 X 50g bars
Preparation Time: 10 minutes
- 150 grams deglet noor dates
- 150 grams raw, unsalted cashew nuts
- Place dates and nuts in blender or food processor and pulse until they form a dough. Do not over–process, as the nuts become an oily mess! When I use my Froothie Optimum Blender, I blend the nuts first, remove and blend dates before blending together. I find it is easier to over mix in a food processor so I now use my blender every time.
- Place dough on clean surface and roll into a rectangle.
- Cut into 6 even bars
- Keep refrigerated
