I am really loving adding fresh lime to my smoothies this week, I think thats down to the arrival of some lovely spring weather here in London. This is an adaptation of a previous smoothie recipe, Lemon and Sorrel Green Smoothie, with lime instead of lemon and shredded coconut and coconut yoghurt added for a different twist. It is a fantastic combination and yet another wonderful way to drink your greens!
Preparation Time: less than 5 minutes
Makes: approximately 750ml or 1 medium smoothie bowl
- 3 small bananas
- 1 large handful spinach
- 1 medjool date
- 1/4 peeled lime
- 2 teaspoons coconut butter
- dessertspoon unsweetened soy yoghurt
- lime zest
- nut toppings
- Blend all ingredients except lime zest and toppings, on high until well mixed.
- Serve and top with lime zest, nuts and more yoghurt if desired.
