I’m drinking 2 green smoothies a day at the moment, spring cleaning! This one is delicious and I am tempted to have it again tonight – even though I know it’s better to rotate the ingredients, I’m not sure I can help it! The great thing about this for me, other than taste, is it uses pears. They’re not popular in my house but we get them in our organic fruit box regularly, and I’m embarrassed to say we have thrown out many old pears. This goes against everything I believe about seasonal eating, food waste and indeed health. Eating a wide variety of food is your best chance at getting a good balance of nutrients. I use them in cakes, fruit crumble… but no-one likes eating them as they are very much. So this is a great solution and its also really delicious. I don’t add water or liquid to my smoothies, preferring a thick smoothie bowl eaten with a spoon. This makes it seem much more like a meal and helps you eat it slower, which is better for you.
You will need a high speed blender
Makes 2 medium smoothie bowls
- 3 medium pears
- 1-2 bananas
- 1/4 cup raw almonds
- 1 tablespoon coconut butter, not the oil ( I use coconut manna)
- 1 medjool date
- 2 large handfuls of your favourite seasonal leafy greens, spinach, kale etc
- Combine all ingredients in your blender until smooth and well combined.
- Add some ground flaxseeds and extra chopped nuts on the top if you wish and serve immediately.
