Another simple dairy free, deliciously creamy and healthy vegan ice cream. This recipe makes enough for two, but if you’re like me, you won’t want to share it!
Preparation Time: 5 minutes
Makes 2 large servings of ice cream
- 3 medium sliced and frozen bananas
- 1 1/2 cups frozen blueberries
- 1 medjool date ( optional )
- Place all ingredients together in your blender and mix until smooth and creamy. Don’t let the blender go to long or you will get runny ice cream! The trick is, with or without a high speed blender, to stop and start a few times and push the mix down. A tamper tool helps a lot but if you don’t have one, just stop every 20 seconds or so and move it a bit.
- Serve immediately!
