Porridge is my go-to breakfast. It’s easy, quick and there are endless ways to prepare and serve it. You can keep it simple by just adding your favourite fruit and nut toppings, or you can add spices and other ingredients to the pot and make something really interesting. The recipe I am sharing today was inspired by a warm almond milk turmeric and cinnamon latte that was served to my husband at our local cafe, 11 Coffee and Co, on Upper Richmond Road. I loved the flavours and thought we could combine that with oats to create a delicious and warming spicy winter breakfast.
I now make my porridge using steel cut oats in our instant pot. I love it this way because the steel cut oats retain shape and texture after cooking, and with a more intact grain it keeps me full for much longer. If you don’t have an instant pot, and I highly recommend one for the ultimate time-saving kitchen gadget, then go ahead and make your porridge using rolled oats and add the spices and dates during cooking.
While this does only take 4 minutes of pressure cooking time, you’ll need to account for a slow release. So I pop this on while I do my exercise or upon waking, and within half an hour or so it is ready.
This recipe is gluten, salt, oil and sugar-free.
For this version, you’ll need an instant pot.
Preparation Time: 1-2 minutes
Cooking Time: Porridge function on high for 4 minutes, with a slow release.
Makes 1 serving
- 1/2 cup steel cut oats
- 1/2 teaspoon ground ceylon cinnamon
- 1/2 teaspoon ground turmeric
- a pinch of black pepper
- 2 chopped dates
- 1 1/2 cups water
- Put everything into the Instant Pot, stir well and then place lid on, sealed position.
- Push porridge setting, adjust to high, reduce time to 4 minutes.
- Once it beeps, leave to slow release.
- Serve topped with fruit, nuts and seeds.
